
Right now, this is my absolute favorite way to prepare chicken. It takes about 15 minutes, the exterior is crispy and the interior is juicy and while I served it topped with a salad today, the chicken itself is delicious served with orzo pasta, boiled potatoes, roasted vegetables…the possibilities are really endless. It’s a hit with kids and also I think lovely for a date night at home as well. I’m sharing the recipe for the chicken – the salad is also super simple: just lightly dress some arugula with olive oil & lemon juice, add some chopped cucumber, halved cherry tomatoes, crumbled feta and a sprinkle of salt and pepper. Olives and chickpeas would be wonderful additions as well.

Crispy Parmesan Chicken
Gather this:
- 2 chicken breasts
- 1 egg
- 1/3 cup all purpose flour
- 1/3 cup freshly grated parmesan cheese (best grated on a microplane so it’s light and fluffy)
- avocado oil (or another oil)
- salt
- pepper
Do this:
Using a sharp knife, butterfly the chicken breasts by slicing lengthwise. If your chicken breasts are very large, cut them into two pieces. Place a piece of parchment paper over the butterflied chicken breast and pound them out so they are an even and about 1/2 inch thick. You can use a meat mallet, heavy pan or rolling pin. Use two shallow bowls to set up your breading stations.
In one bowl, crack the egg and whisk with a fork, season with a sprinkle of salt. In the other bowl, mix the flour, parmesan cheese and cracked pepper.
Heat a large skillet over medium heat. Add enough oil to cover the bottom of the skillet, then add a splash more. Dip the chicken into the egg, then liberally coat with the flour mixture, flipping over a few times to press the dry ingredients into the chicken. Lay the chicken gently into the skillet and cook until golden brown – about 3 minutes each side. Place a wire rack over a baking sheet and put the cooked chicken on the rack into an oven heated to 250 degrees to keep it warm and crispy while you repeat the process, adding more oil as necessary.
Serve topped with salad, as shown in the video below or sliced alongside salad or vegetables.
